On my bosch KGN33V00GB fridge freezer ( after leaving the fridge door open for a long time ), my fridge only goes down to 10*C no matter what I turn the dial to. The freezer is still working OK though. Is it the thermostat that needs replacing? Cheers in advance.

The freezer supplies the fridge with the cold required, check the freezer is defrosting correctly and the fan in the freezer is working to push the air through to the fridge.

I have a thermometer in fridge and temperature varies between 1 and 5 degrees. Does this indicate the thermostat needs replacing?

A mechanical thermostat will have a cut in and cut out temperature difference of several degrees. Combined with the variation of readings caused by warm air entering this is likely to be correct. A better way to measure is to put a thermometer in a glass of water to read an average temperature that should be more stable.

If the light was working previously check the plug fuse and check the power socket with another item to confirm power is getting to the appliance.
