i have just moved into a flat with a Baumatic STD6ss hood. it has a duct to the outside of the building.It has a metal mesh covering with round holes in it and it appears to have no grease filters and just has a black round thing

If the 'black round thing' you refer to is Stock Number: ES1254389 then this is a carbon filter and is only required if the air is not being ducted out of the kitchen. This can simply be removed. Any metal grill can be cleaned using a degreasing agent.
